Meet the Chef
Chef Nicholas Thompson | Water Street Grille | Yorktown, VA
Chef Nicholas (Nick) Thompson brings years of culinary experience, leadership, and passion to the kitchen at Water Street Grille. Originally from Roanoke, Virginia, Nicholas discovered his love for cooking while attending Marshall University, where a mentor recognized his talent and introduced him to the discipline and creativity of professional kitchens. From that moment forward, he knew the culinary world was where he belonged.
After college, Nicholas began building his career in Richmond, Virginia, working at The Jefferson Hotel before continuing on to Omni Richmond Hotel as Executive Sous Chef. These experiences allowed him to refine both his technique and leadership style while serving guests from all walks of life, including celebrities, dignitaries, and distinguished visitors.
Nicholas later played a major role in the launch and growth of Rosie's Gaming Emporium and Colonial Downs, helping develop menus and oversee operations across multiple properties and kitchens. He also served as Executive Chef at 23rd & Main in Richmond and held several leadership positions at the prestigious Country Club of Virginia, continuing to expand his culinary and operational expertise.
Now settled in Yorktown with his wife, Nicholas brings his approachable yet elevated style of cooking to Water Street Grille. His philosophy centers around bold flavor, thoughtful presentation, and creating memorable dining experiences that bring people together. Whether preparing fresh seafood, Southern inspired favorites, or seasonal specialties, Chef Nicholas believes great food should feel both comforting and unforgettable.
Beyond the kitchen, Nicholas is passionate about mentoring young cooks and fostering a team environment built on creativity, respect, and hospitality. His dedication to both the craft and the guest experience is reflected in every plate that leaves the kitchen.
